Of all the fun and festive Christmas cupcake options, hot chocolate cupcakes are some of my favorites. Complete with mini marshmallows and sprinkles, they’re impossible to resist.
Ingredients
- For the cupcakes
- 1 cup all-purpose flour
- 1/2 cup Dutch process cocoa powder
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup hot water
- 2 tablespoons hot chocolate mix
- 1/3 cup neutral-flavored oil (vegetable or canola)
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1/2 cup buttermilk
- 12 marshmallows
- For the hot chocolate frosting
- 1 cup unsalted butter, slightly cold
- 3 cups powdered sugar, sifted
- 1/4 cup cocoa powder
- 7 tablespoons heavy cream
- 1/3 cup hot chocolate mix
- 1/2 teaspoon salt
- 1 teaspoon pure vanilla extract
- For decorating
- 1 (10-ounce) package mini marshmallows
- Christmas colored sprinkles
Instructions
- For the cupcakes
- Preheat the oven to 350 degrees Fahrenheit. Line a 12-cup muffin tin with liners.
- Sift together the flour and cocoa powder in a large mixing bowl. Once combined, add the sugar, baking soda, baking powder, and salt. Use a whisk to mix.
- Heat a 1/2 cup of water and 2 tablespoons of hot chocolate mix in a small saucepan over medium-low heat. Heat, stirring frequently, until steaming.
- Combine the oil, eggs, vanilla, and buttermilk in a second large mixing bowl. Once combined, slowly mix in the hot chocolate with a whisk.
- Carefully pour the hot chocolate mixture into the bowl with the dry ingredients. Whisk until thoroughly incorporated.
- Pour the batter into the prepared muffin tin. Fill each liner 2/3 full.
- Bake at 350 degrees Fahrenheit for 17 minutes.
- After 17 minutes, open the oven and carefully top each cupcake with a marshmallow. Bake for an additional 2 minutes, then remove the muffin tin from the oven.
- Carefully flatten the marshmallows down onto the cupcakes. Then, let the cupcakes sit in the pan for 10 minutes to cool. Finally, transfer them from the muffin tin to a wire cooling rack to finish cooling. Do not add the frosting until they are completely cool.
- For the hot chocolate frosting & decorations
- Remove the butter from the fridge and let it sit for 30 minutes on the counter. (It should still be slightly cool – not room temperature.)
- Sift together the powdered sugar and cocoa powder. Set aside.
- Heat the heavy cream and hot chocolate mix in a small saucepan over medium-low heat. Heat until the mixture warms and thickens. Then, remove the mixture from heat and allow it to cool.
- Beat the butter with a hand or stand mixer for 2 minutes on high speed. Then, slowly add the sugar-cocoa powder mix, salt, and vanilla.
- Pour in the cooled hot chocolate. Mix on low speed until just combined. Then, switch to high speed and beat for 2-3 minutes until it reaches a frosting-like consistency.
- Frost the cooled cupcakes. Then, add 3-5 mini marshmallows and sprinkles as desired. Enjoy!
