What is Watergate Salad?

It’s known by many names—Watergate Salad, Pineapple Pistachio Delight, Green Stuff, Green Goop, or Shut the Gate Salad. But no matter what you call it, one thing’s for sure: I can never get enough of it.

This vintage salad is a delightful mix of pistachio pudding, whipped topping, crushed pineapple, mini marshmallows, and crunchy nuts.

The pistachio pudding gives it a rich, nutty flavor, while the pineapple adds a juicy burst of freshness.

And don’t even get me started on the marshmallows—they make every bite extra soft and fluffy!

I was curious about the name, so I did some digging.

First came Watergate Cake, which was named after the scandal because it was full of nuts (nice burn).

Then, in the 1970s, Kraft Kitchens introduced a similar salad recipe and called it Watergate Salad—and the name stuck!

Ingredients You’ll Need

The best part about making Watergate Salad is how few ingredients you’ll need!

With just a handful of simple ingredients, you can create a creamy, dreamy salad that’s perfect for any occasion.

  • Pistachio Pudding Mix : You don’t have to prepare the pudding beforehand. Simply mix it with all the other ingredients.

  • Crushed Pineapple : Pineapple in juice adds a fruity, tropical, tangy flavor to your creamy dessert salad. Plus, the juice helps turn the pudding mix into actual pudding.

  • Mini Marshmallows : These add fluff and chewiness. When I’m feeling festive, I use the colorful mini marshmallows!

  • Chopped Walnuts : The nuts add texture and crunch. You can use whatever nuts you like best, but walnuts pair well with the other ingredients. If I have time, I give them a quick roast in the oven to draw out their nutty flavor.

  • Whipped Topping : Mixing in the whipped topping gives the whole dessert a fluffy, creamy texture. For this recipe, I wouldn’t recommend homemade whipped topping because it doesn’t hold up well when stored.

Tips and Variations For Watergate Salad

I love how versatile this sweet salad is—you can keep it classic or have some fun with extra toppings and mix-ins!

Here are some of my favorite tips and ways to mix things up:

  • Chill before serving . Let your Watergate Salad sit in the fridge for at least 2-3 hours (or overnight if you can). This gives the flavors time to meld and the salad to firm up. When making it for the holidays, I always whip it up the night before.
  • Gently fold . When mixing the whipped topping and other ingredients, fold them in gently to maintain the airy texture. You don’t want to deflate the fluffy consistency.
  • Make it festive. Top the salad with some sweet and juicy maraschino cherries for an extra burst of flavor. When making it for the holidays, I always add maraschino cherries to make it a little more festive (and sweet)!
  • Add a pop of color. Instead of regular miniature marshmallows, I sometimes use rainbow marshmallows to give my salad a splash of color and fruity flavor. Pick out color combinations to suit every occasion.
  • Get creative with mix-ins . Don’t be afraid to experiment! Try adding coconut shavings, toasted walnuts, or mandarin oranges to make the salad your own unique creation.
